Chinese steam kaya pau and redbean pau


Finally i have my own steam pau tada!!!!

ingredient you need is just simple

1) Pau Flour ( can be obtain in any market/super market i get mine in 99 market in malaysia)
2) Instant yis ( can be same place bought in 99 market as well)
3) Sugar ( im estimate about 6 spoon) you can added up more depend on own taste
4) 5 spoon baking powder
5) half small mug warm water
6) estimate about 6 spoon vegetable oil
7) instant kaya bought from market
8) red bean paste homemade by me ( joey)



redbean paste recipe
1) buy a packet raw redbean best soak it over night ( 3 -5 hour)
2) boil hot water
3) put the soaked redbean and wash  5 to 6 times
7) cooked together inside pot
8) when you feel it already soft
9) blend it with glinder or best if you have blender
10) put sugar and mix around according your taste
11) let it cool down
12) heat up your pot and cook it with your vegetable oil/if you have peanut it will more fragrant
13) the homemade redbean paste can be store up to 2 weeks you can use it paste to make lot of recipe
          ^___^


Step make pau dough

1) first mix around pau flour with sugar added up abit baking powder
2) mix the yeast with warm water and wait about 20 min
3) mix the yeast ingredient with flour

4) kneading accordingly until it smoothen
5add up with vegetable oil and continue kneading 
6) next cover it with cloth or if cling wrap you may use it
7) wait for at least 1 hour until the dough size become double up.



After 1 and 1/2 hour the pau size have been increasing ,you may continue kneading and feel it like toi toi the dough look firming up just like SK11 ads nahh i just joking hehehhehe 

then you may split it up to small size up to your own peference :)


then you can start insert the redbean paste/kaya inside the dough u have created.

use an steam rack i have buy from market those dim sum steam rack ( not so pricey about rm25 in malaysia )

wait until the water heat up then you can put the pau to be steamed up
the process taken about 20 min 

and you can open the cover and see the size have increase 

and there you go your pau is ready to be served. Enjoy muaksssssssssss

Chu Cheong Fun lover aka Cheong fun hong kong people :)

Chu Cheong fun Aka pig instenstial  is everyone favourite for chinese people
 is the chu Cheong fun recipe




. Ingredient is 150g rice flour 1 to 1/2 tbsp wheat starch flour.2 tbsp corn flour 2 cup water .1/2 tbsp salt.

 How to make: stir dry ingredient together slowly add water mixing but i use chopstick stir it easy. U add a bit oil and salt and mix throughly .
 Place a steamer and place oil stainless steel plate. When water is boiling let it steam a few 4 to 5 min.place mixture of rice flour on plate.

 Before that ensure  ur plate brush a bit oil on top. Then only u can pour the mixture but must be thin thin lo otherwise look thick not nice
.then steam liao 4 to 5 min
 u can take plate out and start roll it and put aside.

 u can add on dried shrimp and shallot. Both fried lDe
. Add a bit sesame oil on top

also can to make sauces thim jeong
. U need 1/2 cup water
.7 tbsp hoisin sauces .
3 tbsp soya sauces
and 3 tbsp black soy sauces
and 2 spoon chilies sauces ( I USE maggie)
. But i cook. a bit lo the mixture sauces  so its look thickening mixture. And is ready.happy happy enjoy trying it at home dinner or brunch,.

chai tow kueh ( black fried black carrot cake)

 ingredient:
rice flour
baking sodium flour
granish white radish
salt
oil sesame
2 bowl water
ready made dry salty raddish 1 packs
egg 2

how to steam white carrot cake
1) rice flour
2) mix abit baking sodium flour
3) mix together garnish white radish which have been steam 20 min
4) a little abit sesame oil added up
5) let it steam about 45min
6) then it will become white kueh
7) let it cool down and store it overnight refrigenator for its looking firming


black version fried carrot cake
u needed black soy sauce,salt,salty dry raddish aka chai bo,

heat up the oil. then added up garlic fry until it fragant then put the white cake has been cut off into cubes look.
added up a bit black soy salt.egg,salty dry raddish lastly egg and alittle bit belacan sambal chilies
and tada ... your dinner is ready to be served on your table.


Fruity tutti DIY ice cream for hot weather in malaysia

hi im preparing my own diy fruity icecream because our weather here in malaysia always hot hot and hot...sweating and one more thing children will love it so much due to colourful icecream here.

the ingredient needed is

1) kiwi
2) mango
3)strawberry

4ice cream cup maker /any plastic up or ice cream stick needed
5) sugar about 3 to 4 spoon will do





how to make this

firstly u need to peel off all the skin of ur fruits then follow by blended and put it separately in 3 different bowl

then follow by step is cooking the sugar with 4 to 5 bowl water will do and put a side and while waiting it become cool.

then mix up with the blended fruits

1) blended kiwi you put a few scoop in freezer it 1 hours
2) follow by mango put a few scoop and oz freeze 20 min
3) follow by strawberry and freeze by 2 hour and put the stick together and freeze over night and your fruity tutti ice cream is ready by tommorow

my secret recipe with pork ball meat sweet sour and siu pak choy vegetable

ingredient: pork meat mince,chili sauce maggie ,tomatoes sauce,onion,corn flour,tomotoes, cucumber,pineapple



how to make a meat ball??

1) mix the mince meat ball with corn flour and make like round shape types
a little bit salt and pepper

2)  heat oil and fry the pork meat ball until gold colour
3)set a side when finish fry

4)how to make a sauce fry the onion,tomatoes,chilies, abit garlic,pineapple,chili sauces and tomotoes sauces
5)saute with pork meat ball and the sauces inside wok and about 20min

6) the dish is ready to be serves
 
ingredient : vegetable siu pak choy,anchovies and garlic and oyster sauces

heat up oil fry garlic untill fragrant
then fry anchovies
then put the vegetable and fry it
put a little abit oyster sauces while stir fry

your dinner is ready to be serve muaksssssss

taste good.



nam yu pork belly meat. (red bean curb pork belly)

ingredient:
roughly about 20 pork meat belly fat area
nam yu ( red bean curb) 1slices will do
1 tsp ng heong fan powder
marinate about 20 minutes

then heat the wok with oil fried this marinate pork rib belly until become brown colour
cool down for 10 minute and it now ready served at tables.

TODAY SPECIAL CHINESE PASTA AKA HANDMADE PAN MEE


THE INGREDIENT TO MAKE AN DOUGH

1) NORMAL FLOUR 600GM
2 WATER 3 BOWL WATER
3) 4 TSP SESAME OIL
4)2 EGG
5)1 TSP SALT (SMALL SPOON)
6)CORN FLOUR TO DUST IT


TO MAKE SOUP BASE

1)ANCHOVIES POWDER
2)garlic

as topping
1)fried anchovies
2)mushroom slices
3)choy sam
4)chicken slices



FIRST TO MAKE AN DOUGH ,U NEED TO KNEAD THE DOUGH UNTIL VERY SMOOTH KEEP IN FRIDGE 2 HOURS LESS

PREPARE HOT WATER BOILING DE THEN USE HAND TO MAKE THE DOUGH BECOME SLICES IN BOILING WATER
AND PUT IN COLD WATER TO PLACE ASIDE/CONTAINER

TO PREPARE SOUP BASE PUT ANCHOVIES POWDER,GARLIC ,choysam and abit salt

LASTLY REBOIL AGAIN PAN MEE AND ADD SOUP AND ADD TOPPINGS

THE DINNER IS READY NOW ,ENJOY

healthy with oatmeal prawn (crunchy texture)



tonight is special dinner after opening of new year 2012 my secret recipe healthy yet delicious and little abit crunchy texture here we need the ingredient 8 to 10 prawn 1 chilies padi 2 stakes curry leaves 3 dried chilies cut into sections 3 tsp butter 5 spoon oat half bowl cupflour seasoning 1tsp salt 1 slices chicken stock 1/2 tsp pepper 1 tsp sugar how to cook trim away the feelers of the prawns pat dry and completely toss into corn flour in a wok heat enough oil until hot and deep fry prawan until their color change to golden brown and put a sides heat clean wok + add half spoon butter once it melt add oat and fry it then add curry leaves ,dry chiliesmchili padies and curry leaves.. add seasoning and return prawn to the dish stir and fry add to combines and serves

petai fried meehoon recipe


ingredient
300g meehon
chop pork slices
5 dry chilies
100g petai
1 red shallot
25g dried shrimp
cabbage torn
3 cloves garlic chopped
salt
oil


first soak meehoon,dried shrimp and dry chilioes until soft
minced the soaked dried chilies and dried shrimp
heat up oil in a pan fry choped garlic
and red shallots'
add minces dried chili and dried shrimp
put in petai fry to 1 minutes
add sambal sauces
add meehoon. add prawn
taste accordinly until it fully as desired.

FRIDAY NIGHT SIMPLE DINNER FOR FAMILY



egg plan with dried shrimp and chilies

INGREDIENT
1 EGG PLAN CUT OFF TO SMALL SLICES
1 SMALL CHILIES
dried shrimp soaked in water
2 garlic minced
1 tsp oyster sauces
how to cook

heat up oil fry egg plan until golden brown then add garlic minced and add dried shrimp and chilies and add olyster sauce
let it cook with 20 min and until it soft

serve it on plate





1 fish according desire
1 garlic minced
1 chili mince
1 thumb size ginger minces
1 instant ginger+garlic sauces
1 small tsp salt




prepare
wash the fish and rub the fish with salt
and put in a plate
then add ginger ,garlic,chilies and add up with onion
and added the sauces and some oil and
then steam about 30 min
use chopstick to see weather the fish is cooked
the fish is ready for dinner




ingredient
8 to 9 prawan sliced and peel off
1 THUMB SIZE GINGER SLICED
VEGETABLE CLEANING UP AND SOAK IN WATER
1 TSP SALT
PEPPER
1 TSP RICE WINE


PUT VEGETABLE,GINGER,AND BOILED IT ABOUT 20 MIN
THEN ADDED UP WITH PRAWN AND EGG AS DESIRED
ADD SOME SALT AND PEPPER AND LASTLY SOME RICE WINE
TO TASTE ACCORDINGLY

TONIGHT SPECIAL IN JOEY KITCHEN BRAISED PORK RIB WITH YELLOW BEAN SAUCES AKA CANTONESE SHI CHAP PAI KUAT



INGREDIENT

1KG PORK RIBS
1 THUMBS SIZE GINGER
2 TSP CHOPPED GARLIC
1 CHILI PADIES CHOPPED
1 SMALL TSP YELLOW BEAN SAUCES
1/8 SALT



1 CHOP GARLIC,GINGER AND CHILI PADIES TOGETHER
PUT ASIDE

BOILING WATER THEN PUT PORK RIB INSIDE AND DRAINED IT OUT AND LEFT ASIDE


HEAT OIL IN WOK/PAN THEN PUT MINX INGREDIENT AND COOK UNTIL FRAGRANT
PUT PORK INSIDE IN WOK AND COOK IT
THEN PUT 1/8 SALT AND 1 TSP YELLOW BEAN SAUCES

THEN ADD SOME WATER AND TASTE ACCORDINGLY
